Ingredients:
- 2 sea bass filletsĀ
- 1 red chilliĀ
- 1 tsp root gingerĀ
- 300gĀ pakĀ choiĀ
- 2 tsp olive oilĀ
- 1 tsp sesame oilĀ
- 2 garlic cloves,Ā minced
- 2 tsp soy sauceĀ
- Salt

- Preheat the oven to 180c. Prepare a piece of foil large enough to wrap the bass fillet.Ā
- Place theĀ seaĀ bass in the centre of aĀ piece ofĀ foilĀ large enough to wrap around the fillets. Ā SprinkleĀ with the chilli, ginger and a pinch of salt.Ā
- Fold the foil to form a parcel around the fish and place in the oven for 15Ā minutes. Ā
- Heat the oil in a large frying pan or wok over medium heat thenĀ cookĀ the garlic in the oil for 2 minutes. StirĀ regularly. Ā Mix in theĀ pak choiĀ and stir until the green parts of the leaves turn bright green and the stalks become slightly translucent - approx 5 to 8 minutes. Sprinkle with salt to serve.
- Serve the fish on top of theĀ pakĀ choiĀ with the soy sauce sprinkled on top.Ā Ā Ā
