Pea and Mint Soup

WHAT YOU’LL NEED:
6 spring onions, chopped
300g frozen peas
500ml chicken or vegetable stock
1 tbsp chopped mint (or coriander)
Salt and pepper to taste
Optional: Add chopped garlic or chopped chilli for that extra kick.
METHOD:

Note: Like most soups, this freezes really well once cooled. Avoid prolonged boiling and simmering of this soup in order to retain the fresh green colour.
