- 2/3 cup of 2% reduced-fat, plain greek yoghurtĀ
- ¼ cup of red onionĀ
- 1 tbspĀ of fresh lemon juiceĀ
- 2 tbsp fresh dill, dicedĀ
- ½ tsp saltĀ
- ¼ tsp black pepperĀ
- 1 cucumber, shreddedĀ
- 1 garlic clove, mincedĀ
- 2 cup of chicken breast, cooked & dicedĀ

Mix all ingredients into a bowl and enjoy!Ā Ā

Fresh Green Bean Salad with Lemon-Mustard DressingĀ š
90 calories - 2g of protein - 4 servings
Ā
- 1lb fresh green beans, stems trimmed - cook for 4 minutes until crisp-tender. Drain and rinse with cold water.
For the dressing:
- 2 tbsp olive oil
- 2 tbsp of fresh lemon juice
- 1 tsp of grainy brown mustard
- pinch of sugar
- 1 clove of garlic, crushed
- salt & pepper to taste
Whisk until well combined. Then add the beans to the dressing. To finish, add 1/4 of thinly sliced red onions and serve.Ā

Ocean Wave Tuna Salad š

- 2 cans of well drained tunaĀ
- ½ a cup of diced vegetables (bell pepper, cucumber, celery, green onions)Ā Ā
- 1 can of small white beans, drainedĀ
- 2 tbsp of freshly chopped parsleyĀ
- 1 tbsp of olive oilĀ
- 2 tsp of balsamicĀ vinegarĀ
- salt and pepper to tasteĀ
