  • 2/3 cup of 2% reduced-fat, plain greek yoghurtĀ 
  • ¼ cup of red onionĀ 
  • 1 tbspĀ of fresh lemon juiceĀ 
  • 2 tbsp fresh dill, dicedĀ 
  • ½ tsp saltĀ 
  • ¼ tsp black pepperĀ 
  • 1 cucumber, shreddedĀ 
  • 1 garlic clove, mincedĀ 
  • 2 cup of chicken breast, cooked & dicedĀ

Fresh Green Bean Salad with Lemon-Mustard DressingĀ šŸ‹

90 calories - 2g of protein - 4 servings

  • 1lb fresh green beans, stems trimmed - cook for 4 minutes until crisp-tender. Drain and rinse with cold water.

For the dressing:

  • 2 tbsp olive oil
  • 2 tbsp of fresh lemon juice
  • 1 tsp of grainy brown mustard
  • pinch of sugar
  • 1 clove of garlic, crushed
  • salt & pepper to taste

Whisk until well combined. Then add the beans to the dressing. To finish, add 1/4 of thinly sliced red onions and serve.Ā

  • 2 cans of well drained tunaĀ 
  • ½ a cup of diced vegetables (bell pepper, cucumber, celery, green onions)Ā Ā 
  • 1 can of small white beans, drainedĀ 
  • 2 tbsp of freshly chopped parsleyĀ 
  • 1 tbsp of olive oilĀ 
  • 2 tsp of balsamicĀ vinegarĀ 
  • salt and pepper to tasteĀ
