Bean Chilli

Method

  • Add the garlic, carrot, celery and chilli powder/paste into a large pan on a medium-high heat. Cook for around 5 minutes until the vegetables have softened
  • Add the chopped tomatoes and stir for 30 seconds, then add the brown rice and leave on a low heat for 20-25 minutes, stirring occasionally until all the vegetables are cooked through
  • Add the beans 10 minutes from the end of cooking
  • When everything is cooked through, serve in a bowl

  • 1 medium sized carrot, diced
  • 1 stick of celery, diced
  • Chilli powder or sauce (to taste)
  • 10g of garlic purée or 1 clove crushed
  • 150g of Chopped Tomatoes
  • 50g of Brown Rice
  • 50g of Mixed Beans
