Bean Chilli (VG, V, DF, GF, NF)
Ingredients
- 1 medium sized carrot, diced
- 1 stick of celery, diced
- Chilli powder or sauce (to taste)
- 10g of garlic purée or 1 clove crushed
- 150g of chopped tomatoes
- 50g of brown rice
- 50g of mixed beans
Method
- Add the garlic, carrot, celery and chilli powder/paste into a large pan on a medium-high heat. Cook for around 5 minutes until the vegetables have softened.
- Add the chopped tomatoes and stir for 30 seconds, then add the brown rice and leave on a low heat for 20-25 minutes, stirring occasionally until all the vegetables are cooked through.
- Add the beans 10 minutes from the end of cooking.
- When everything is cooked through, serve in a bowl.
