Bean Chilli (VG, V, DF, GF, NF)

Ingredients

  •     1 medium sized carrot, diced
  •     1 stick of celery, diced
  •     Chilli powder or sauce (to taste)
  •     10g of garlic purée or 1 clove crushed
  •     150g of chopped tomatoes
  •     50g of brown rice
  •     50g of mixed beans

Method

  1. Add the garlic, carrot, celery and chilli powder/paste into a large pan on a medium-high heat. Cook for around 5 minutes until the vegetables have softened.
  2. Add the chopped tomatoes and stir for 30 seconds, then add the brown rice and leave on a low heat for 20-25 minutes, stirring occasionally until all the vegetables are cooked through.
  3. Add the beans 10 minutes from the end of cooking.
  4. When everything is cooked through, serve in a bowl.
