Easy Quinoa Bowl

Method
- Cook the quinoa as per the packet instructions
- Heat the olive oil in a pan and cook the peppers and mushrooms until they start to soften
- When they are cooked, stir in the quinoa
- Add the spinach and allow it to wilt
- Season and serve

- 1 tsp olive oil
- 3 mushrooms, quartered
- 1/4 yellow pepper, chopped
- 1/4 red pepper, chopped
- 1 large handful spinach, chopped
- Black pepper to taste
