Easy Quinoa Bowl (VG, V, GF, DF, NF) 

Ingredient

  •       45g quinoa
  •       1 tsp olive oil
  •       3 mushrooms, quartered
  •       1/4 yellow pepper, chopped
  •       1 large handful spinach, chopped
  •       Black pepper to taste

Method

  1. Cook the quinoa as per the packet instructions. 
  2. Heat the olive oil in a pan and cook the peppers and mushrooms until they start to soften.
  3. When they are cooked, stir in the quinoa. 
  4. Add the spinach and allow it to wilt. 
  5. Season and serve.
