Easy Quinoa Bowl

Method

  • Cook the quinoa as per the packet instructions
  • Heat the olive oil in a pan and cook the peppers and mushrooms until they start to soften
  • When they are cooked, stir in the quinoa
  • Add the spinach and allow it to wilt
  • Season and serve

  • 45g quinoa
  • 1 tsp olive oil
  • 3 mushrooms, quartered
  • 1/4 yellow pepper, chopped
  • 1/4 red pepper, chopped
  • 1 large handful spinach, chopped
  • Black pepper to taste
